Well I started the car and noticed the clutch engagement point was almost to the floor, car is basically out of brake fluid. Will be looking for a leak in the master cylinder/slave cylinder this weekend

Not exactly sure why x would cause y here, but I'm willing to bet there is air in the system now which in turn is causing the problem

Well I'm having my girlfriend meet me at work with some DOT4. It's so low I'm afraid the clutch won't disengage and I'll be stuck. Will update after adding fluid

Bleed the clutch good when you get it home and see how it does.

Wouldn't it have made sense to wash it after you put the hardtop on so you won't be surprised by a leak when it actually rains?

No, I didn't want any dirt on the paint before fitting the hardtop, then I tested for leaks and used some quickwash to clean it up
