Safe to remove SST Chip

So I finally decided to buy Hondata but all of a sudden no one around me is selling virgin p28s and anywhere else wants way too much. However, I have a p28 that came with the car that had been chipped (SST chip) and was thinking about basically following the steps on "How to chip your ecu" but undoing everything until my board is back to stock. BUT, Hondata's site says not to do so (which I believe could just be so you buy an ecu) but I wanted to see if anyone had done so before or if anyone just says absolutely not to do that. Thanks.

tldr; have chipped ecu, want to undo chip to install Hondata, ok or not?

You can either buy a EPROM (chip) from a reputable vender with a stock bin or burn it yourself using Crome if you have the hardware.

What I was saying was removing the chip I currently have and installing a hondata s300. I currently have a chip on ectune, but no one near me tunes anything but Hondata anymore

Yes you can. Read the hondata install help file. There are a few board modifications that may need to be modified.
